Chicken and Sausage Jambalaya

Hi, All!

It’s Saturday I have a little more time to put dinner together. I was a little nervous because it’s my first time making Jambalaya. My mom’s is AMAZING which means I’m pretty much measuring mine against hers. Scott and I are both in for the night and I figured it makes a great date night meal — just an idea 😉

Remember that you can add shrimp (very common) but I didn’t feel like going through the trouble of deveining them. Yes, even though it’s the weekend I don’t want extra work, LOL. Another thing to note is I hate measuring things, especially seasoning. What I suggest is to season to your taste. And lastly, feel free to sub anything in the recipe for what you may have on hand or your preference.

Ingredients:

  • red, green, and yellow bell peppers
  • 2 1/2 cups Jasmine rice
  •  4 1/2 cups water
  • turkey sausage
  • 1 1/2 cups shredded chicken
  • 1 cup of tomato sauce (or diced tomatoes if you prefer)
  • Creole seasoning
  • salt & pepper
  • seasoning salt

Instructions:

  1. cook rice (I used my Black & Decker rice cooker)
  2. add olive oil or butter (your preference) to the skillet
  3. place your diced bell peppers in the skillet
  4. sauteé your vegetables
  5. add sliced turkey sausage to the skillet
  6. cook sausage thoroughly
  7. place shredded chicken pieces into the mix
  8. when rice is done, add it to the skillet
  9. pour tomato sauce (or diced tomatoes) in the skillet
  10. enjoy!
