I’ve seriously been M.I.A. lately. We’ve had so much going on. Scott’s been on the job hunt and I’ve been working super hard. My responsibilities have changed at work, so I have a lot more on my plate than before. It’s cool, though because I hate being bored. More after the jump.
I was at it again this week at work. We had a little sweet craving and I decided to get into the kitchen and put something together. I got the idea from CakesCottage. Dan’s cake inspired me to make one of my own and tweak it a little bit to my taste.
It’s Saturday I have a little more time to put dinner together. I was a little nervous because it’s my first time making Jambalaya. My mom’s is AMAZING which means I’m pretty much measuring mine against hers. Scott and I are both in for the night and I figured it makes a great date night meal — just an idea 😉
Since I’ve been planning our meals a week in advance I’ve been happier with what we’ve been eating. It’s amazing how many different dishes you can think up when you’re actually creating a menu! This has also eliminated the need to grab something quick from a fast food chain or repeating the same go-to dishes; it gets expensive and BORING. I tweaked a recipe from Chungah’s blog. I love her ideas so much.
It’s been a rough few days because my family’s been sick 🙁 Baby Girl and Scott are still sick, while I’m recovering. We spent the weekend in bed watching movies and keeping Baby Girl’s fever at bay. I had to drive around the block a few times to get her to fall asleep, tonight.
The baby’s down for the night so I’ve finally got some time to post my easy recipe for Crock-Pot or slow cooker chicken and dumplings. I hadn’t made it in a while so I wasn’t sure if it would turn out well but Scott LOVED it! I hope you enjoy it as well.
